Recently I travelled to Switzerland for work. So like a globe trotter wannabe, I started with eating the local food. A week down I finally gave in and was already craving for Chaat !!! Yours truely went to Grocery store and Bought some good old canned Chole and Rajma with a few veggies and whipped up a quick Aloo Chole Chaat

Aloo Chole Chaat
Ingredients:
Canned Chickpeas or chole – 1 can
tomatoes – 2 finely chopped
Onion – 1 finely chopped
finely chopped green chilli, Ginger Julienne
Some olive oil
Red chilli flakes
Black pepper powder
Paprika
MTR Garam masala
One inch thick Slices of potato with skin – 5 usually it would be one medium sized potato
Most relevant here lemon juice – 2 tsps
For Chole
Heat olive oil in a pan
Put in half of julienned gingerand half of chopped green chillies. Fry for half minute
Add chopped onion and sauthe till golden pink
Add chopped tomato (leave some aside for garnishing) and sauthe till tomatoes become soft and are completely cooked
Add chilli flakes, paprika and salt to taste. cover for a minute
Add drained chicpeas from the can. Sit everything together. Cover for a minute
Uncover and add 150 ml of water. Bring this to boil covered till water comes to a rolling boil.Allow it to simmer for 2 minutes
Switch off the cook top and add Garam masala
Readying the potatoes:
Preheat the oven at 170 degree centigrade for 4 minutes
Season the Potato slices with olive oil ,salt and black pepper.
Oil the baking tray lightly and bake the seasoned potato slices for 8 mins at 130 degree centigrade then increase the oven temperature to 160 degree centigrade for 3 mins.
Finally Lets Assemble the dish:
Take a deep plate. Place Potato Slices in a single layer
Pour the Chole over Baked potato slices
Garnish with chopped tomatoes, onions and green chilli.
Sprinkle some lemon on top
Also sprinkle Salt, Garam masala and paprika
Dish is Ready to Serve
